Maragogipe (Elephant Bean)
Rosario and her brother Oscar are third-generation coffee producers at Finca Santa Clara in the highlands of Santa Rosa, Guatemala. Their grandparents began growing coffee in the 1960s, seeking an honest and respectful way of life, a legacy Rosario and Oscar continue with deep pride and care. Rosario, a trained agronomist with expertise in coffee farm management, regenerative agriculture, and agribusiness, leads the farm with dedication, walking the parcels daily to monitor plant health, nutrition, and overall conditions. Together, they’ve preserved heirloom varieties like Bourbon, Caturra, and Pache Colis, while recently adding Maragogipe, all grown under native shade trees at 1,750 masl. Labor remains entirely hands-on, supported by local workers who return year after year thanks to the farm’s fair wages and family environment. Post-harvest, Rosario focuses on producing clean, expressive natural profiles by carefully separating lots and giving each the attention it needs. Her work reflects a deep respect for the land, her family’s legacy, and a passion for producing quality coffee with integrity.
Over the past two years, we've had the privilege of visiting Rosario and Oscar at Santa Clara and witnessing their care firsthand. We were fortunate enough for Rosario to visit us in Southwest Michigan, connecting with our team at Infusco and seeing how her coffee is prepared, served, and appreciated by our community.
