

Bolivia Finca Rosita
Finca Rosita is a 32-hectare (79 acre) farm located in the Illimani community of Caranavi, Bolivia. Named in memory of Rosa Angelica Aramayo, the farm is fully dedicated to coffee cultivation.
This coffee undergoes anaerobic fermentation, where cherries are sealed in oxygen-free tanks for 4-5 days. Airlocks release CO2 while preventing oxygen entry, ensuring consistent, controlled fermentation. A brix meter monitors sugar levels in the liquid that collects at the tank’s base. Once the reading reaches 8 brix, the coffee is removed and dried over 20-25 days, weather depending.
